Better-For-You Banana Chocolate Bread

INGREDIENTS:

  • 1 ½ cups ripe, mashed bananas
  • 3 tablespoons molasses
  • 1 cup monk fruit, allulose, or stevia
  • ½ cup melted coconut oil, plus extra for brushing the pan
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ⅓ cups almond flour
  • ½ cup tapioca starch
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon powder
  • ½ teaspoon salt
  • ¾ cup dark mini chocolate chips

Optional toppings:

  • ½ cup toasted, chopped walnuts

PREPARATION:

  1. Preheat the oven to 325°F (163°C). Line a loaf pan with parchment paper and brush with a thin layer of coconut oil.
  2. In a large bowl, combine the mashed bananas, molasses, and alternative sugar. Use a fork to thoroughly mash and mix until smooth.
  3. Whisk in the eggs, melted coconut oil, and vanilla extract until well combined.
  4. In a separate bowl, mix the almond flour, tapioca starch, baking soda, cinnamon, and salt.
  5. Create a well in the center of the dry ingredients and pour in the wet mixture. Stir until just combined, being careful not to overmix.
  6. Fold in the dark chocolate chips and walnuts, if using.
  7. Pour the batter into the prepared loaf pan, spreading evenly.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the banana bread cool in the pan for 15-20 minutes, then transfer to a wire rack to cool completely before slicing.
  10. Optional Addition: For a crunchier topping, sprinkle extra walnuts over the batter before baking.
